With Crown Sydney setting a new benchmark in Sydney’s dining scene we are now looking for a suitably experienced and passionate Chef De Cuisine to guide the team to achieve new heights in culinary excellence at Crown Towers Room and Villa Service. This is will not be a standard Chef De Cuisine role as you will be encouraged to deliver creative and delicious menus that showcase the very best in room experience across the hotel. Reporting to the Executive Sous Chef, you will be required to train & mentor your team whilst liaising with a wide range of stakeholders including senior level management. Your advanced time management, organisational and task delegation skills will ensure efficient daily kitchen operation.
Key duties of this position will include:
- Creation of modern enticing menus for in room & villa dining
- Have a flexible approach to be able to take directions from a broad range of stakeholders and guests
- Run the kitchen to highest possible standard that is required to obtain a Forbes Five Star rating
- Management of a small and diverse team of Chefs and Environmental Service Attendants
- Strict compliance to Crown’s HACCP program
- Financial accountability to ensure the operation is profitable
- Building strong relationships with the management group, colleagues and suppliers
Key selection criteria:
- Experience in a wide range of cuisines and an understanding of a high expectation 24 hour operation
- Demonstrated experience in a luxury culinary operation is imperative with Forbes experience highly regarded
- Knowledge of the latest trends in the industry to create menus that bring to life the in room dining and lobby lounge experience
- Advanced team building skills to ensure a seamless operation in a high expectation environment
- Ability to create innovative menus that create a different experience to the traditional norms
