THE OPPORTUNITY

Reporting to the Head Chef, the Chef will provide support in the day to day operation of Southern Metropolitan Cemeteries Trust (SMCT) kitchens based at Springvale Botanical Cemetery. The Chef will be relied upon to coordinate the daily operations of all Café Vita Flores activities and when needed, assist the Head Chef to delegate tasks to kitchen staff and work to resolve any operational problems if they arise.

Responsibilities include:

  • Ensure all kitchen staff operate efficiently and effectively in line with SMCT's operational policies, procedures and processes.
  • Effectively manage kitchen staff and lead by example by demonstrating the SMCT Values at all times.
  • Ensure all employees provide a clear handover during shift changes and that each shift is reviewed and handovers/briefings are carried out.
  • Provide efficient stock management and wastage control.
  • Complete required performance reviews for all kitchen employees and set KPI's.
  • Ensure a professional level of grooming and personal presentation at all times, as per the SMCT Dress Code Procedure.
  • Maintain the 'Food Safety Plan and HACCP Management System' ensuring compliance at all times to legislative requirements.
  • Adhere to all local, state and federal laws and regulations in regards to workplace health and safety.
  • Take ownership for ensuring that all employees across the kitchen, café and florist comply with Workplace Health and Safety legislative requirements.
  • Ensure that all digital reporting platforms are maintained and updated with all incidents and that all records are kept up to date.
  • Monitor awareness and ensure that all employees understand and comprehend fire and evacuation procedures.
  • Other duties as directed.

ABOUT YOU

  • Experience in managing a team of employees within the Hospitality industry or equivalent.
  • Current qualifications or certifications in Commercial Cookery or equivalent.
  • Proven experience in end to end management of corporate catering events.
  • Availability during both weekdays and weekends.
  • Proven knowledge and understanding of current food trends in Australian Retail Food service.
  • Strong understanding of HACCP and food safety practices and processes.
  • Professional presentation with a confident manner.
  • Ability to work under pressure to achieve outcomes.
  • Excellent attention to detail.
  • Self-motivated with exceptional time management and organisational skills.
  • Ability to display initiative when required.
  • Excellent communication, interpersonal and customer service skills
  • Ability to be flexible to work across multiple SMCT locations.
  • Valid Victorian Driver's Licence.
