Secure Journeys has been selected to operate Australia’s Onshore Immigration Detention Network on behalf of the Australian Government.

Spotless, as a subcontractor to Secure Journeys, will be responsible for preparing and serving culturally diverse, nutritious meals contributing to the overall health and well-being of those in the centres.

With the new contract commencing in early 2025, we currently have a full time role available for a Chef Manager to join the Spotless team.

In this role, be responsible for menu design, oversight of food preparation and ensuring the Catering services team are preparing and serving culturally diverse, nutritious meals contributing to the overall health and well-being of those in the centres.

What You’ll Do

The role has a broad remit, with key responsibilities outlined below:

  • Supervise, roster, and lead the Catering Services team, ensuring all staff are trained in HACCP-based food safety practices and certified where necessary.
  • Develop and implement 28-day menu plans that meet nutritional, cultural, and dietary requirements while ensuring adherence to Australian nutritional standards and contract requirements.
  • Maintain compliance with food safety laws and standards, proactively manage alerts and inspections, and ensure proper disposal of waste in line with regulations.
  • Menu design and delivery of the preparation and service of meals, including self-service options, accommodating individual dietary and cultural needs, and maintaining high hygiene and food safety standards.
  • Participate in forums and consultative meetings, addressing feedback and ensuring continuous improvement in catering services tailored to detainee needs.
  • Cost control and procurement of goods.
  • Allergen and dietary responsibility.
  • Ensure compliance with the HACCP Food Safety Plan, monitoring food safety standards and practices, maintaining hygiene in food preparation areas, and completing all Food Safety Documentation accurately and timely.
  • Monitor and enforce food storage standards, ensuring proper handling and rotation of stock using First In, First Out (FIFO) principles, and maintaining appropriate holding temperatures for perishable items.
  • Ensure compliance with our Standards of Business Conduct and contribute to a culture of safety and quality improvement.

What you’ll bring

  • Due to the nature of the work, you must be an Australian Citizen to be considered for this opportunity and willing to be sponsored for government security and employment clearances.
  • Certificate III in Commercial Cookery and Food Safety Supervisor Certificate.
  • Knowledge of menu and nutritional standards.
  • Full understanding of HACCP Food Safety guidelines.
  • Exemplary cooking skills.
  • Strong written and verbal communication abilities.
  • Excellent teamwork and interpersonal skills.
